Halibut and chilli bean sauce

STEAMED NORDIC HALIBUT WITH CHILLI BEAN SAUCE

Ingredients
400 g halibut fillet
3 tbsp chilli bean paste (can be bought in Chinese grocery stores)
100 ml water
2 cloves garlic – chopped
1 inch ginger – chopped
1 tbsp oil
2 tomato – diced
1 red chilli – sliced
Salt/pepper/sugar to taste

Method
In a frying pan, heat oil and sweat ginger and garlic until soft
Add chilli bean paste and water; bring to a boil
Add diced tomato and sliced chilli and season to taste
Steam fish for about 3 minutes, remove and discard excess water
Pour sauce over and garnish
